Improving storage of plantain (Musa paradisiaca L.) through using of improved shelters: Case of PITA 3 variety (Musa AAAB)

Abstract: Plantains (Musa spp), like most tropical fruits and vegetables, are highly perishable, and there are still no effective preservation methods available to farmers. The aim of this study is therefore to help reduce post-harvest losses of plantains through improved storage. To this end, the PITA 3 variety was the subject of this study and was harvested on six different dates and then stored under improved shelter. Biochemical and phytochemical characterisation was assessed during storage. The results showed that green shelf life varied from 11 to 28 days depending on the stage of ripeness and was longer than that of the PITA 3 controls (4 to 7 days) stored in the open air. Most of the biochemical and phytochemical parameters increased during storage. Total sugar levels increased from 3.05% on day 0 to 29.29% on day 21, and total polyphenol content varied from 246.69 mg/100 g DM on day 0 to 1417.33 mg/100 g DM. On the other hand, starch levels decreased from 88.50% on day 0 to 33.99% on day 21 during storage. As a result, the PITA3 variety should be harvested between the 80th and 95th day after flowering to ensure a long self life.
