Physico-chemical characteristics of fresh bael and mango fruits

Abstract: The fresh bael and mango fruits were evaluated for various physico-chemical characteristics. Data show that average fruit weight, pulp weight and pulp yield of bael and mango fruits were (443.33 and 330.00 g), (638.00 and 691.90 g/kg fruit) and (63.80 and 69.19%), respectively. Chemical constituents of bael and mango fruits such as total soluble solids (TSS), total sugars, reducing sugars and acidity were analysed to be (31.29 and 21.00%), (21.03 and 14.99%), (8.30 and 5.88%) and (0.38 and 0.42%), whereas total carotenoids, pectin and total phenols were found to be (1.39 and 1.23 mg/100 g), (1.84 and 0.67%) and (25.84 and 57.77 mg/100 g), respectively.
