Abstract: Hexanal application is one of the recent strategies for enhancing the shelf-life of fruits and vegetables by inhibiting phospholipase D, which is key enzyme responsible for degradation of plasma membrane. The partial inhibition of Phospholipase D helps to increase shelf-life of fruits and vegetables by preserving membrane stability. Hexanal has very low vapor pressure and highly volatile nature that leads to face challenges with increase in temperature when exposed to environment. Microwave synthesized β-Cyclodextrin Metal Organic framework (β-CDMOF) acts as good delivery vehicle for hexanal, due to its internal hydrophobic walls. In our study, Thermalstability TGA (292ᵒC) and DSC, X ray diffraction (XRD) and loading efficiency (24.04%) were studied to illustrate β-CDMOF as a potential Template, whereas UV-Vis (297nm) and FT-IR spectra studies provides the confirmation of β-CDMOF loading of hexanal.
