Physico-chemical characteristics of fresh Aonla and papaya fruits

Abstract: The fresh aonla and papaya fruits were evaluated for various physico-chemical characteristics. Data show that average fruit weight and pulp weight of aonla and papaya fruits were (26.94 and 2863 g) and (836.00 and 718.00 g/kg fruit), respectively. Chemical constituents of aonla and papaya fruits such as total soluble solids (TSS), total sugars, reducing sugars and acidity were analyzed to be (9.00 and 9.50%), (4.77 and 7.75%), (2.25 and 4.28%) and (2.17 and 0.25%), whereas pectin, ascorbic acid, total carotenoids and total phenols were found to be (1.26 and 0.76%), (510.00 and 41.00 mg/100 g), (0.30 and 2.46 mg/100 g) and (243.00 and 122.00 mg/100 g), respectively.
