Glycemic index of multipurpose functional food mix

Abstract: Diabetes mellitus is the universal problem affecting human societies at all stages of development. Functional foods are foods that provide additional physiological or health-promoting benefits. Hence, multipurpose functional food mix was developed by using jowar, puffed rajkeera, whole bengal gram, horsegram, deoiled soya meal and functional ingredients flax seed, niger seed, deoiled coconut meal, gum acasia, wheat bran and skimmed milk powder. The mix was evaluated by panel members for acceptability. The mix was analyzed for functional properties and nutritional quality. The clinical implication of multipurpose functional food mix was assessed on 10 normal female subjects belonging to age group of 20-30 years. Multipurpose functional food mix is very well accepted by the judges. The findings of the nutrient evaluation evidenced that multipurpose functional food mix was rich in protein (27.33%), dietary fibre (24.46 %), iron (18.6 mg/100g) and calcium (433mg/100g). The estimated micronutrients were calcium 433 mg, iron 18.6 mg, zinc 2.3 mg, copper 0.82 mg and manganese 0.63 mg per 100 g respectively. The glycemic index of Multipurpose functional food mix was 38.69 ± 3.74 which is categorized as low glycemic food. Hence, it can be concluded that the multipurpose functional food mix can be very well utilized for preparation of multiple recipes and for management of diabetes.
